1 pack L’Authentique Chorizo 280gm (4 sausages)
2 tablespoons cooking oil
1 onion, diced
3 red capsicums, deseeded and chopped
3 cloves garlic, sliced
2 teaspoons smoked paprika
2 teaspoons dried sage
2 teaspoons crushed chilli (optional)
1 can diced tomatoes, plus 1/2 can water
2 tablespoons tomato paste
16 large prawns, thawed and peeled
To serve: rice or crusty bread
Slice chorizo into bite-size pieces. Heat oil in a sauté pan, add chorizo pieces, onion and capsicum. Fry for 10 minutes, stirring occasionally.
Add garlic, paprika, sage and chilli, stir well to combine and cook for 2 minutes. Add canned tomatoes with 1/2 can water and the tomato paste. Once bubbling hot, stir in the prawns and cook for 5 minutes until prawns are fully cooked. Taste and season with salt and pepper.
Serve with rice or warmed crusty bread.
