1 pack L’Authentique Traditional 280gram (four sausages)
Toulouse sausages
1 tablespoon cooking oil
3 carrots, chopped
1 onion, diced
3 cloves garlic, chopped
2 tablespoons tomato paste
3 cups silverbeet, chopped
1 can cannellini beans, drained
To serve: A handful fresh parsley, chopped

Heat a tablespoon of oil in a large pot over medium heat. Add the sausages and fry for 6 minutes, turning until browned on all sides. Remove from pan and slice. Reserve.
Place carrots, onion, garlic and tomato paste into the pot and fry for 5 minutes, stirring occasionally. Add silver beet, drained beans, sliced sausage and 1.5 litres of water, scraping the bottom with a wooden spoon, bring to a simmer. Simmer for 30 minutes until vegetables are tender. Taste and add seasoning to your liking.
Serve in bowls sprinkled with fresh parsley.
